I wasn’t taking pictures of the making of this meal because I didn’t think that it would be “blog-worthy.” I was just using ingredients that I had and I wasn’t following a recipe. Then, I thought that I should definitely blog about when I just throw ingredients together. So here it is – bacon, corn, and pesto tortellinis.
Bunch of Basil
2-4 garlic cloves
Handful of Pine Nuts
Spicy Olive Oil
Run the ingredients through a food processor. Add the olive oil slowly so you can choose the consistency. Remember that when you add the pesto to the pasta combination some of the liquid will make the pesto a little thinner.
Can of corn
1/2 of an Onion
Pepper (I used yellow but I would use orange or green if I made it again)
Tortellini (I used chicken filled but you could use whatever variety)
Make the tortellini according to the directions on the packaging. Cook the bacon and as it is done move the bacon to paper towels. Drain some of the bacon fat but not all. Throw in the corn, onion, and pepper and saute until softened and warmed. Be careful to keep stirring so that the mixture does not burn. Chop the bacon. Add all your ingredients in a big pasta bowl. Stir in the pesto. Enjoy!
