Pesto, Potatoes, and Green Bean Pasta

When I saw this recipe in Mario Batali’s 327 Simple Italian Recipes to Cook at Home, I immediately wanted  to try it. It included ingredients that I liked, and it did not look difficult to make. I was disappointed that my Harris Teeter did not have basil so I didn’t make my own pesto but instead used store bought. Although I like my own basil because I can add some spice, using the store bought made the meal quicker and easier. Right before starting I thought about adding bacon, but it was too late since the bacon was frozen. 

I started by boiling the potatos. I feel like I never leave enough time for the potatos to cook all the way so I started these much earlier than the rest of the meal.

When they were tender, I drained the potatoes and cut them into quarters.

Then I boiled the green beans for about three minutes. I drained them and ran them under cold water for a bit before putting them aside.

Finally, I made the linguine. All the ingredients were then mixed in a big bowl. Voila – Dinner!

I think this was tasty, but next time I would make it as a side dish and add bacon.
