I made my first batch of Christmas cookies and it really got me in the holiday spirit. Even though I made Oatmeal Butterscotch cookies, which are not necessarily Christmas cookies, there is something about fresh baked cookies and holiday decorations that just works no matter the type of cookie.
I ultimately decided to use the Oatmeal Butterscotch cookie recipe on the back of the Nestle butterscotch bag. I did add some nutmeg to hopefully make these cookies a little more Christmas-y.
1/4 c. brown sugar
1/4 c. white sugar
2 sticks of butter
1 teaspoon vanilla
1 1/4 c. flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1 bag butterscotch morsels
3 c. quick oats (I used a little less then 3 cups)
Cream the sugars, butter, and vanilla. When the mixture is smooth stir in the two beaten eggs. It is recommended to mix your dry ingredients together in a bowl. I usually add the flour on top and then the spices and baking soda and use the teaspoon to lightly stir the dry ingredients while they are sitting on top of the sugar/butter/egg mixture. Once all your ingredients are mixed, add in the oats and butterscotch morsels.
I made most of a batch for some non-chocolate lovers. In the end, I could not resist adding a little something, so a little bonus surprise was hidden in the middle of my cookies just for fun.
I can’t wait to make more cookies. There’s no way these are lasting until Christmas, so it is good I’m excited to make more.
