Pasta with Avocado Sauce

I love avocados. I’m such a sucker for them that often times when I’m out to eat I will see something with avocado as an ingredient and will immediately stop reading the menu. It is really not a good ordering strategy, but I can’t stop.

Growing up my older brother called avocados “green slimys,” well, he still does, but it turned me off. My mom is a big avocado eater and puts slices on all of her salads. Since I was hesitant to eat salad dressing, I got a special salad that did not always get the same ingredients (I think my mom put up with this so I would eat salad). When she stopped putting up with this (I bet if I asked she would make me a special salad), I realized my love for avocados.

Now, I see Quick Avocado Pasta and I’m in. This recipe was indeed quick and easy and I thought it was a delicious side pasta. I made it with spicy chicken bites and a sauteed corn salsa type side. Yum!

Avacado Sauce

It was super easy. Pulse 3 garlic cloves, lemon juice from 1/2-1 lemon, and about 2 tablespoons of olive oil. I have to admit I did not measure closely. Then add in the avocado and basil. Mix with cooked pasta. Check – all done.
