Pizzeria Paradiso’s Plum Pesto Pasta

At the last Pizzeria Paradiso beer dinner, there was another delicious plum pesto pizza on the menu. Greg, the beer sommelier, shared his recipe with me so that I might be able to recreate the plum pesto.

Plum Pesto Pasta

I wrote the “recipe” on the back of my receipt. Greg made me promise that pizza was his so I decided to make a pasta dish and use garlic bratwurst that we got at a pork farm a couple weekends ago. I had some difficulty at Whole Foods and ended up with Plum Preserves and dried prunes.

Plum Pesto Pasta

Here is what I did:

Plum Pesto
about 8 dried prunes
1 cup plum preserves
1/2 cup parmesan cheese
1/2 cup pine nuts
several glugs of olive oil

Blend these ingredients in a food processor.

Veggies, Brats, and Pasta
1 lb garlic bratwurst
one red onion
one red pepper
one bunch of asparagus
several glugs of olive oil
Pasta of your choice

Set up your water to boil for pasta and then cook as instructed on the package. Saute the garlic brats, cutting them into pieces as they cook. After a couple minutes, add in your chopped vegetables and some olive oil. Saute for about 10 minutes.

Plum Pesto Pasta

Mix together the pasta, plum pesto, and the veggie/brats mixture.

    As I have said before, I rarely go back for seconds but I had a huge second helping of this. The plum pesto was so so good. I want to eat it on everything.
