I’m Back!

After a week of this -



while eating this -


Yup, that is fried bacon with maple syrup. Belize’s Palapa Bar knew the way to my heart. Boy did I need this -

Chopped Salad

I think I’m in love with the chopped salad, and I am predicting more in the future. I used Jamie Oliver’s ideas as a starter and then added more information. Here is what I did.

Bunch of green onions
1 cucumber
1 yellow pepper
1/3 of a red onion
1 avocado
Several cherry tomatoes
1 head of ice berg
A couple of glugs of olive oil
Spoonful of red wine vinegar
Spoonful of mustard

In the center of the cutting board start chopping the hard crunchy vegetables – green onions, cucumber, yellow pepper, and red onion. I continued to turn the board and add the new ingredient to the middle and continue to chop. I added the avocado, tomatoes, and the lettuce together. Then in the middle of the board add the dressing ingredients – olive oil, red wine vinegar, mustard, and pepper. Continue to chop and mix the ingredients with the knife. (I added some pre-cooked chicken on top).

I’m ready for the summer of the chopped salad – or for the summer period.

    That salad looks super delicious and I’m loving the Belize pictures! I still can’t get over how clear the water was.
