Another staple of mine is mac and cheese. I really like the leftovers and so I used to make mac and cheese when only I was around, but I thought it would be good Hurricane Irene comfort food. I often play with the toppings, but lately I have settled on the goat cheese and shallots as the best. This recipe is from the December 2008 Bon Appetit, which is where I have it, but it also avaliable on epicurious now. I also added bacon to the top becuase why not? My sous chef was busy grating cheese and cutting bacon and although the recipe is easy to follow there is not a lot of stop time to take pictures.
